The date everyone is talking about (at this end at least) is the one in the first film. Pretty sure of that. That’s the only time in the whole trilogy anyone refers to ‘25 years’ – after Marty’s trip back 30 years to Doc’s day of meeting the business end of the toilet seat, it makes for neat sequel symmetry to go forward that distance as well.

Besides, when they made the first film they weren’t planning on two sequels, I believe.

Except, the “future date” everyone is talking about is the date they travel to at the beginning of the SECOND MOVIE.

In the first movie they travel 30 years back. In the second movie they travel 30 years forward.

The actual “future date” they travel to second movie is October 21st, 2015:

It’s just the Penguin re-issue of the book, with the layout of the continents on the cover in braille. I took a photo of it on the piano and then darkened it to bring out the really light text and the (now quite dirty) raised dots…

It’s a stunning book. Really speculative in that its about a world where Japan and Germany split up ownership of the continents after winning WWII…and also really humanist as it explores how people deal with a world that still has a lot in common with the real one, but where the authoritarian personality is the norm. There’s a lot more. Tons more. You should learn to read and get into it.
